Whilst I love cheesecake, wine and chocolate, I try to eat healthy the majority of the time. When my boys were going through a fussy eating phase, it certainly helped for them to see me trying new things too. Only yesterday, my eldest was whining about eating some banana, “but I’ve already had fruit today, I had some at fruit snack” he whinged. He eventually had some more when I explained our bodies need fruit and vegetables and more than one each day.
Though whilst I try, sometimes it’s not easy. I’m always on the move, whether in or out the house. I’m always doing something so sometimes find myself running out of time to prep veg and cook a meal from scratch. So when Tesco Orchard contacted me about the new Tesco Beautifully Balanced range of frozen food I was interested to try it.
The range includes frozen ready meals, soups, pasta sauces as well as pre-prepared frozen vegetables and fruit. Since it’s all frozen, you can stock up and not worry about it going off before you eat it. I decided to try the Spiced Butternut Squash Soup which comes in a 600g bag that contains two portions. I’ve never seen frozen soup in the supermarket before and definitely not soup in a bag.
It can be cooked by emptying half the pack into a covered, microwavable container and cooking for 6 minutes. Alternatively, it can be heated in a saucepan on the hob for 4-5 minutes. I decided to cook it on the hob and found it quite easy to pour out half the bag and save the rest for another day.
Once cooked, it looked very tasty. The lovely butternut squash colour combined with the green of coriander. I couldn’t wait to try it and I wasn’t disappointed when I did. It was smooth and creamy with the sweetness of butternut squash mixed with a slight, warming spice.
Overall, I loved this soup. Butternut Squash soup is a favourite of mine and I’ve tried many varieties but I think this is my new favourite! I love how it’s so handy too. I can keep a pack or two of this in my freezer and it’s ready in about 5 minutes. I will definitely be buying more of this soup and hope to try more from the Tesco Beautifully Balanced range also.
